One Year Anniversary





It's been way too long since we (and when I say "we"....I really mean I) have posted! We're both back at school and super crazy busy this semester! I am taking my LAST 18 credits filled with art and humanities courses while Roger gets to play nurse at the hospital in Idaho Falls every week. I know I make his seem fun but he works really hard in his classes too! We have already filled our few weeks back with lots of studying and late nights. Anyways, just wanted to say that we haven't fallen off the face of the earth (I know our 5 readers were worried about us)!

AND....We just celebrated our YEAR anniversary last weekend! SO AWESOME. I definitely got the best husband out there. He got me an iMac, which I absolutely love and he got two guns. We both got a little spoiled. But, I think you have to celebrate being together one year because it can be the hardest and at the same time the most rewarding thing. I am so glad I have him as my companion forever! Here are a few pictures. Post more soon! :)

When The Parents Visit

This weekend was full of fun. On Friday we went swimming, out to dinner, and to iCover (concert on campus) with Roger's dad and step-mom. On Saturday Roger, Brad, and Cade completed a triathlon and got second place by 10 seconds. Roger ran a 5k, Cade biked 12 miles, then Brad swam 600 meters. Then we had a BBQ at our complex with some friends (thanks to Jeff and Maren). Then we went to Jackson Hole. It was quite eventful and we had a blast! :)

Good News!



After many hours of studying, late night caffeinated pop and pizza runs he made it! Roger got accepted into the BYU-Idaho Nursing Program for Fall 2011. I am so happy and proud. That means another two years here in glorious Rexburg! ;) Other good news.... I get to shoot my first wedding next weekend!

New Calling


Here we are. The new Nursery/Primary Teachers! Just got the calling this morning and helped out today. I've missed this calling. I had it when I was at my home ward a couple years ago. I think it intimidates Roger a little but he really is good with kids. And...I also am so happy because Rexburg is actually beautiful, sunny, and hot. The End.

Sharing Recipes Are Always A Delight



I love when we have people over because it gives me a good excuse to make something new I have been dying to try. We had Jessie and Cade over on Saturday and made this little number. Loved it! Even the leftovers were great. I recommend it. Hope you all had a great weekend. We are looking forward to this three-day weekend. We are having our good friend Sarah in town and going to West Yellowstone. Life is good.

Four-Cheese Pasta Florentine:

what you need

3 cups mostaccioli, uncooked
1 pkg. (10 oz.) frozen chopped spinach
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
2 eggs
1 pkg. (8 oz.) KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1/4 cup KRAFT Grated Parmesan Cheesemake itHEAT oven to 375ºF.

COOK pasta as directed on package, omitting salt. Meanwhile, cook spinach as directed on package; drain well. Place in large bowl. Add cream cheese; stir until melted. Stir in cottage cheese and eggs until well blended.

DRAIN pasta. Add to spinach mixture with mozzarella; mix lightly. Spoon into 8- or 9-inch square baking dish; top with Parmesan.

BAKE 25 min. or until center is set.

The Challege






Roger made me proud on Saturday night when he entered into an eating competition. There were two girls competing and about 10 guys. It was at Sammy's - a burger joint in Rexburg. He had to eat a six pattie burger, a shake, fries, and a drink... all in under 20 mins. Sounds crazy right? Well he did it in 17 mins and got second place! Haha. It was amazing. He won $50 in gift cards to Sammys. We celebrated afterwards, Roger bought his "entourage" shakes (Steve, Brad & Leyla). It was a success and I have to post pictures. Did i mention that they're going to post a video of this whole thing.... i'll have to post it soon :)

Whatever makes him happy...



So I walk home from classes today to find this lovely note on the door. You see, Roger has been checking the mail over and over and over again in anticipation for his new stereo stuff. I have tricked him a few times saying "I'm pretty sure I heard someone knock at the front door" and this worked for the first couple times.... Haha. Anyways I don't think I have seen this boy as happy and excited in quite some time. So if you're in the mood for a movie Roger would love to show it off and we'll even pop some popcorn for ya! :)

Oh Summer Dreams

I can't wait to get to make some crafts this summer.



It is bad that we are only one week into the new semester and I am daydreaming of summer?! Probably not the best mindset but... I'm working on it. Most of all I want to work on some crafts. There are so many cute blogs out there with the cutest crafts. I am just excited that the sun is FINALLY out in Rexburg and NO SNOW. I cross my fingers that we are done seeing snow but my better judgement tells me otherwise!

Lets see any updates with us... well... we teach Sunday School and are starting to enjoy it. I rely on Roger a lot because we both get nervous to teach. He's so good at it though. We both are excited to hear if Roger has been accepted to the nursing program and we should know in about a month or two. I wish we had more exciting news but as for now its all about being happy, poor, and working hard. :)
